Microwave nachos are a favorite snack of mine. They’re quick and easy to make, and they taste great! A friend of mine recently asked me how I made mine, so I figured I might as well be efficient and post the recipe online for everyone.
- Tortilla chips
- Shredded cheese
- 1 jalapeño pepper
- Black beans
- Sour cream
- A large plate
You can really put whatever you want on, though. I use guacamole, diced chicken, shredded lettuce, and cilantro sometimes, too.
First, dice up any ingredients that need to be. This includes peppers, lettuce, cilantro, and anything else big. Set them aside for later use.
Next, arrange your tortilla chips on the plate. Try to cover as much as you can with only a little overlap, so you get the maximum amount of space possible without wasting much.
Next, cover the chips with the ingredients that you want to microwave. This includes salsa, black beans, peppers, and, if you have any, meat and guacamole. I save lettuce and cilantro for afterwards so that they don’t get soggy or gummy from the microwave.
After that, cover the chips with a layer of shredded cheese. Microwave it until the cheese is just melted, about 70-90 seconds or so.
Finally, remove from the microwave and add any last ingredients, such as lettuce or cilantro. Serve with sour cream on the side for dipping.
